The choices are limited; there are only a few types of vegetables available and even fewer types of meat. Out of tradition—or necessity—the villagers eat anything that can be hunted, including mice, snakes, and cockroaches. They don’t have electricity, and water is brought in from the river with buckets. Each hut has a small fire, which is always kept lit, because it is the only way to cook and warm food. Regina was born and raised here, having met her husband when she was 19. They had six children who have given them 11 grandchildren in turn. In Malawi and neighboring countries, what they call “caterpillar” is actually the maggot of an insect similar to a moth. These maggots can be found on trees at the beginning of the rainy season. The villagers catch and dry the maggots to use them as food all year long. Each village has its own recipe, and I had the chance to taste them in a sauce. Finkubala (caterpillars in tomato sauce): Ingredients: four pounds dried caterpillars; two tablespoons canola oil; one onion; two tomatoes; teaspoon of salt. Soak the dried caterpillars in water for about five minutes to soften them. Drain and air-dry. Next, in a large sauté pan, heat the canola oil on low heat. Add the onion and tomatoes, cooking for 10 minutes, or until the vegetables have softened. Add the caterpillars to the pan, and season with the salt. Continue cooking for 15 minutes, stirring continuously, until the outsides of the caterpillars are crisp. Serve with rice or mashed root vegetables, or if you want to do it as they do in Malawi, serve it on a leaf and eat with a piece of tree bark. #malawi #food #recipe #grandma
